Weighing is putting food on a scale and recording mass. Volume is a different measurement that flour humiliates: the same cup is a different dough on a humid Tuesday. King Arthur’s baker’s-percentage teaching: weigh each ingredient, use one unit of measure, and you can scale and talk to other bakers 1.
Baker’s percent is weighing with a grammar #
Flour is 100%. Everything else is a percentage of that flour weight. Hydration is liquid as a percent of flour. King Arthur’s white-bread example: 50 lb flour, 33 lb water → 66% hydration 1. You cannot see that in a pitcher.
Preferments confuse a formula until you split them into flour and water and restate overall percent. That arithmetic lives on Unit conversion. The habit is simple: put the bowl on the scale, tare, add Wheat flour, add Water, add Salt.
What to observe #
Look at the display. A scale that drifts as you lean on the table is lying. Weigh into the mixing bowl when you can so you do not lose a transfer.
Feel. Packed brown sugar and sifted flour are volume theater. Mass does not care.
Failure: a “75% hydration” country dough that was actually cups, then panic when it slacks. Adjust water to the flour in front of you after you have weighed a starting point.
Temperature measurement is the other instrument bakers actually need. Mise en place is having those weighed bowls ready before the mix starts.
