Matching a baker’s-percent formula to a real mixer, oven, and shift — dough yield is the arithmetic; the practical question is whether that weight fits the shop.

Production scaling is putting a formula on the floor. Baker's percentage writes the recipe. Dough yield turns a target dough weight into grams: King Arthur’s conversion factor — divide wanted dough weight by the sum of percentages, then multiply 1. Their 150-pound French-bread example is that arithmetic. The practical question is whether the mixer, oven, and crew can take that weight without missing Desired dough temperature or the bake window.
Calvel treats breadmaking as technical production, not a slogan 2. A home five-kilo dough and a trough are not the same thermal object. Do not invent a spiral-mixer capacity chart.
What actually moves #
Batch size changes friction, mix time, and how fast dough exchanges heat with the room. Fermentation scheduling is when bulk and proof have to land. Scaling up without re-measuring friction is how you hit the conversion factor and miss DDT. Scaling down a shop formula into a home bowl without changing water temperature is the same error in reverse.
After the mix, Dividing has to add back to the mixed weight, minus bench flour and bowl smear — not a new percentage. Weighing is the habit. Bakery quality control is whether today’s loaves match yesterday’s.
The teaching loaf that already speaks baker’s percent is Country loaf (teaching formula). Scale it only with the conversion factor, then measure the dough.
