Fermentation scheduling is the production problem: the same formula must be ready for the oven on Tuesday and on Saturday. Cold as a calendar #
King Arthur: swap a typical 1- to 3-hour room rise for an 8- to 12-hour refrigerator rise, one of the two rises, not both 3. Bulk in the fridge if today is short and tomorrow is long; shape-and-chill if the bake window is tomorrow morning. A shaped sourdough loaf in their account prefers about 16 to 18 hours cold, with about 24 hours as a ceiling before off flavors and lost strength 4.
Failure #
Hitting DDT and still missing the oven because inoculation or flour enzymes moved. Chilling both rises until the yeast is spent. Treating 16 hours as a flavor superstition rather than a window with a sour, weak end. This is not pathogen-control scheduling. Watch volume, feel, and aroma; then move the next mix's water or the next day's fridge time.
