Bakery yield

How much saleable bread you keep after dough is mixed — bake-off, cooling loss, trim, and hopper waste — not the baker’s-percent conversion that sizes a batch.

Bakery yield is what the shop actually keeps. Dough yield is King Arthur’s conversion factor: divide wanted dough weight by the sum of baker’s percents 1. Production scaling asks whether that weight fits the mixer. The next loss occurs between mixed dough and cooled, labeled loaves.

U.S. standardized bread, rolls, and buns must finish at not less than 62% total solids 2. That is a legal moisture floor for those names, not a craft target. Calvel treats production as technical, not a slogan 3.

Why it matters

A loaf that hits formula weight at the divider and misses net weight after Cooling is a yield miss. BAKERpedia, citing AIB International’s bread-manufacturing course: divider pieces are usually set 13–15% heavier than finished product to cover fermentation loss, oven Evaporation of water and ethanol, and cooling evaporation 4. NIFTEM-Thanjavur’s training PDF uses a rounder shop figure: generally 12% extra dough weight to compensate for loss 5. Those are workshop ranges, not 21 CFR and not interchangeable laws. Measure your product and line.

Giveaway (overweight to be safe) is cost. Underweight against a labeled net is a compliance problem for packaged bread. Bakery quality control is whether today’s loaf matches the formula; yield is whether the mass you sold matches the mass you meant to sell.

Mechanism

Losses are different physics:

  • Fermentation. Yeast turns some solids into CO₂ and ethanol that leave. Small as a percentage, real if you hold dough long in a warm hopper.
  • Bake-off. Water (and some ethanol) leave as vapor. Hearth loaves with more exposed crust typically lose more than pan loaves; do not invent a percentage beyond the cited shop ranges.
  • Cooling. Steam keeps leaving after the oven. Cutting or bagging hot steals less weight into the bag and wrecks crust — that is quality as well as grams [see Cooling].
  • Mechanical waste. Bowl smear, bench flour, trim, floor dough, croissant off-cuts. Dividing should add back to mixed dough minus those leaks, not to a new percentage.

Volumetric dividers care about density. BAKERpedia: if dough sits gassing in the hopper, piece weight drifts 4. They relay an AIB cue not to hold dough more than 20 minutes in the divider hopper before rounding — industry teaching for that plant style, not a home-kitchen rule.

What to observe

62% total solids on standardized bread is a laboratory solids test on the finished food, not a cue you can taste as “dry enough” 2. Craft bakers who do not use those legal names still need a cooled-weight spec if they sell by the pound.

Do not treat 12% or 13–15% as a food-safety number. They are mass-balance heuristics from training texts.
