Evaporation is Water becoming vapor and leaving. Concentration, drying, and a crisp crust are the same physics in different crafts. Heat and moving air speed it; a lid or a Dutch oven delay it on purpose.
In the preserving kettle #
A conventional jam gel needs concentration: boiling drives off water. Ohio State’s doneness tests exist because fruit water varies; the sheet, plate, and (as a hint) thermometer cues are how you see that water is gone enough for pectin to work 1. Under-concentrated jam is syrup. Over-concentrated jam is candy with fruit in it. Listen for the boil changing from watery rattle to slower and thicker. Application: Jam.
In drying #
NCHFP: drying preserves by removing water; it complements canning and freezing 2. The craft page is Drying. Pieces should feel dry in the way that food requires — fruit leathery, many vegetables brittle — not merely warm. Water activity is why that water loss matters for microbes.
In the oven #
King Arthur: keep steam early so the crust stays extensible; vent after about twenty minutes (their home hearth cue) so the crust can dry and crisp 3. Trapped steam is delayed evaporation. A leathery crust is evaporation that never finished. Baking the loaf is the sequence; Heat transfer is the path.
Failure modes #
- Lid on too long. You are stewing, not concentrating.
- Heat so high the surface case-hardens. The outside looks dry; the inside is wet. Quality, and in drying a mold risk later.
- Confusing evaporation with a tested canning process. Driving off water does not replace a researched jar process.
Observe weight, surface feel, and sound. Time is a proxy.
