Proteins that speed specific changes in food — ripening, dough extensibility, cheese ripening — until heat or other conditions stop them.

Enzymes are proteins that make particular reactions run faster at kitchen temperatures. They are not microbes. Lactic acid bacteria and Wild yeast make enzymes; blanching and a hot oven stop many of them. Their names matter when a specific enzyme changes the food, such as amylase in grain or pectinase in fruit.
In vegetables, before the freezer #
NCHFP: blanching — a short heat in boiling water or steam — slows or stops enzyme action that would otherwise damage flavor, color, and texture in frozen vegetables. It also cleanses the surface, brightens color, and wilts pieces so they pack 1. Use NCHFP’s food-specific blanching times. Under-blanching is a quality failure you notice months later as dull color and off flavor. Over-blanching is a cooked vegetable you then freeze.
Freezing is not the same as drying. Drying removes water. Blanching is the heat step that handles enzymes.
In dough #
Calvel treats enzyme activity as part of flour behavior, alongside gluten and ash — something the baker learns in the dough, not a single number to worship 2. King Arthur’s autolyse article names two flour enzymes in that rest of flour and water: protease, which they say encourages extensibility by acting on protein, and amylase, which they say turns starch into sugars yeast can use 3. That is practitioner teaching. Their working window for the rest is 20 to 60 minutes. Salt and leaven, in that account, tighten gluten, which is why a true autolyse delays them.
Feel the dough after the rest: smoother, more stretchy, less shaggy. That is the observation. Rye that ferments too fast is a different flour; King Arthur advises against autolyse on sourdough rye for that reason 3.
In cheese #
FAO: coagulation can be enzymatic (rennet attacks a stabilizing piece of casein); ripening is biochemical change brought about mainly by bacterial enzymes 4. Application: Coagulation. Do not copy vat temperatures from that manual onto bread.
Heat that is meant to stop enzymes is not the FSIS leftover clock. Pathogen control is Food safety.
