Denaturation

Proteins losing the folded shape that kept them soluble or active, so milk can curdle, an enzyme can stop, or gluten can be treated as a network instead of a bag spec.

Denaturation is a protein changing its working shape. The food may thicken, curdle, or stop an enzyme. The word is not a cooking method. Heat coagulation is specifically heat as the agent that sets protein. Acid and enzymes can denature without a flame.

Milk proteins are not one thing

FAO splits Milk protein: casein about 75–80% of the total, whey proteins about 20–25%. Ordinary cheesemaking coagulates casein. Acid lowers charge and bound water on casein micelles until they aggregate; the reaction is temperature-sensitive. Rennet cuts a stabilizing piece of casein so micelles can bond 1. That is Coagulation. Colostrum, FAO warns, turns to curd on heating and the curd is too soft — a heat denaturation you did not want.

Enzymes are proteins you sometimes want dead

NCHFP blanching uses a short boil or steam to slow or stop enzyme action that would damage flavor, color, and texture 2. That is denaturation as preservation quality control. Times stay on NCHFP. Enzymes is the worker; heat changes the worker’s shape.

Dough is a different protein job

Gluten forms when flour proteins hydrate and are worked. Calvel treats gluten as behavior in dough, learned by feel as well as specification 3. Mixing organizes; acid from fermentation eventually tightens and then degrades that network. That is not cheese. Do not copy vat pH onto bread.

Observe: a clean break in a cheese vat; a vegetable that stays bright after a month frozen; a dough that goes from shaggy to smooth. Those are proteins in new shapes. A grainy yogurt or a shattered curd is the same family gone too far.
