Mascarpone

A fresh, spreadable dairy gel made by heating cream and adding acid so whey proteins denature into the mass — not U.S. cream cheese and not ricotta from whey.

Mascarpone is cream that gelled because it was heated and acidified, not because it was cheddared. Capozzi and colleagues: a soft-spread, unripened dairy product manufactured by the thermal-acidic coagulation of milk cream 1. Raw materials they describe: cream (they cite a composition of 80 percent dry-weight lipids and 2.8 to 6 percent protein) plus acidifying substances — acetic, citric, tartaric, or lactic acids, vinegar, or lemon juice — to a final pH they place between 5.7 and 6.6 1. The cream is heated to 85–95 °C and, while stirring, acid is added to force coagulation. During that heat, whey protein denatures and aggregates or sticks to casein micelles and the fat-globule membrane, so whey proteins partly remain in the matrix through a long drain 1. That is why the paste is thick and mild rather than a tangy acid-set log. See Heat coagulation and Denaturation.

21 CFR Part 133 has no mascarpone section. U.S. Cream cheese is a different named food: pasteurized dairy ingredients; lactic acid-producing culture plus a clotting enzyme; milkfat at least 33 percent by weight of the finished food; moisture not more than 55 percent 2. Cream cheese is a cultured, enzyme-set, relatively wet paste. Mascarpone is a heat-acid cream gel at a higher pH than a typical lactic set. They are not interchangeable identities. Ricotta is a different heat job again: whey proteins precipitated from whey (or whey plus milk), not from a vat of cream.

FAO’s acid-coagulation physics still helps: acid lowers charge on casein; at higher temperature the coagulum forms at a higher pH (less acid) 3. Mascarpone lives on that temperature lever. Acid-set cheese is the casein-acid cousin without this heat-denatured whey-protein contribution. Cream is the starting fraction. Citric acid is one acid the literature names, not a free sourness knob.

Capozzi notes Italian listing as a traditional agro-food product (Prodotto Agroalimentare Tradizionale), not a PDO designation 1. An acid dose and drain time belong to a specific recipe and dairy process.

What to notice

Look: ivory, smooth, spoonable, not grainy, not weeping a lake. Taste: sweet-dairy and fat, only a slight tang — that 5.7–6.6 pH window is why it is milder than yoghurt-set cheese. Graininess is overheated or over-acid protein. It is a high-moisture fresh food. FAO treats fresh cheeses as perishable 3. Do not can it. Return to Cheese.
