Ricotta

A fresh dairy gel made by heating whey (or whey plus milk) so whey proteins precipitate — not the casein curd of ordinary cheesemaking.

Ricotta is a second cheese from the liquid the first cheese discarded. FAO: ordinary cheesemaking coagulates casein (about 75–80% of milk protein); whey proteins (about 20–25%) stay in the whey 1. Heat that whey and those remaining proteins can come out of solution as fine curds. That is a different gel from the vat’s casein network. See Whey and Coagulation.
Cheddar identity is a casein make: culture, clotting enzyme, cut, cook, drain, salt, press 2. Ricotta is not that procedure. Do not look for a clean-break knife test; the particles are small and fragile.
Heat, then a little acid #
Kitchen ricotta is often whey or milk brought hot, then finished with acid so the flakes gather. FAO’s acid-coagulation physics still applies to whatever casein remains, and heat helps whey proteins join the mass 1. Kettle temperature depends on the milk and acid process. FAO’s cooked-whey mysost is a different product: long reduction of whey with sugar and spice until nearly solid and brown 1. Ricotta is flakes you drain, not a brown block.
What to notice #
Look for small white grains rising and clumping, with a yellowish whey underneath. Taste sweet-lactic and milky, not sharp cheddar. Texture should be moist and fine, not rubbery. Overcooked grains are grainy and dry; under-set liquid is just hot whey.
