Bloomy rind

A surface-ripened style whose white mold coat proteolyzes the paste from the outside in — U.S. identity is “soft ripened cheese,” not a named Brie law.

Bloomy rind is a ripening job, not a species of milk. A white mold coat — CDR names Penicillium camemberti for bloomy-rinded cheeses such as Brie and Camembert — grows on the surface and the paste breaks down from the outside toward the center 1. That is the style. Anatomy of coats, natural rinds, and smears belongs on Cheese rind. The craft depends on what the coat is for, how the paste should change, and what the U.S. identity actually names.
21 CFR 133.182 is the catch-all for soft ripened cheeses that do not have their own section. Solids contain not less than 50 percent milkfat. After coagulation the curd is drained and shaped; harmless flavor-producing microorganisms may be added; the cheese is cured under conditions suitable for development of biological curing agents on the surface, and the curing is conducted so that the cheese cures from the surface toward the center 2. Cow, goat, or sheep milk, or mixtures, are allowed 2. The legal name is “Soft ripened cheese” plus a recognized variety name or a non-misleading fanciful name. There is no separate U.S. standard titled Brie. Named wheels sold as Brie or Camembert are examples of this style, not a second identity to fork.
If the milk is not pasteurized, the cheese is cured at not less than 35 °F for not less than 60 days 2. That is a legal alternative to pasteurization for this standardized food, not a tasting calendar and not a home process. Outside-in is the mechanism #
FAO’s ripening stage is enzymatic change organized, in surface-ripened styles, at the outside 3. Mold proteases and lipases work inward. A young bloomy has a chalky core under a thin white coat. A ripe one shows a creamline — paste that has gone from gel to fudge — moving toward the center. Ammonia at the surface is a late-stage smell of protein breakdown; a soapy, collapsed paste is the same chemistry taken too far. CDR treats bloomy rooms as their own air problem: humidity, temperature, and airflow as process controls 4. Their molded-rind humidity target is 90–95 percent, distinct from an aggressive smear at 98 percent and up 5. Those figures are professional ripening-room practice, not a bedroom-closet recipe.
The cheese is still made in the vat. Moisture, fat, pH, and salt at demolding set whether the coat can finish the paste 4. You cannot spray white mold onto a dry cheddar and get this style. Cheese cultures chooses the surface flora; interior lactic acid bacteria are still Lactic acid bacteria.
What to notice #
Look: even white coat, not a grey slip or a cracked desert. Feel: yield under the rind without a water balloon. Smell the cut face. Taste paste and coat separately so you know which one you are judging. Tasting cheese is how you read the result. Affinage is the practice.
