Cream cheese

A high-moisture, acid-set fresh cheese rich in milkfat — spreadable because it kept whey, not because it was aged into softness.

Cream cheese is a fresh, spreadable paste. The softness is moisture you did not press out, plus fat you kept, plus an acid gel rather than a cheddar-style elastic curd. FAO’s fresh-cheese teaching: high water content (they give 70–80%) and a fat content they place at 5–20% for a generic fresh cheese 1. Cream cheese sits on the richer end of that idea because the dairy ingredients include cream. The cited U.S. cheddar standard does not define cream cheese; its 50% fat-in-solids / 39% moisture cap applies to cheddar 2.

Acid gel, then a gentle drain

Acid-set cheese is the set: cultures or added acid destabilize casein. Yogurt is a cousin gel you may not drain. Cream cheese is drained enough to spread, not enough to slice like cheddar. FAO: too much whey left in curd makes it sour; they usually remove more whey from fresh cheese than from cheese for ripening 1. The lever is cloth time and temperature, not a cave.

CDR still wants composition if you manufacture it: moisture, fat, pH, and salt 3. A wet, low-acid lot is a quality and keeping problem, not “more luxurious.”

What to notice

Look: smooth, not grainy, not weeping a lake of Whey. Taste: mild lactic, milky, slightly salty. Graininess is over-acid or overheated protein. Gassiness is contamination. FAO: eat fresh cheese soon, or refrigerate; they give 1–2 weeks at 4–6 °C as a teaching range for generic fresh cheese 1. That is not a U.S. dating rule.
