Food safety is not a mood. Canning, dairy, and many ferments have failure modes that enthusiasm does not cancel. Use the relevant authority and tested process for the food in front of you.
Canning #
NCHFP, adapting USDA AIB 539: Clostridium botulinum can grow in moist, low-acid, low-oxygen food and produce a deadly toxin. Acid foods (pH 4.6 or below) may be boiling-water canned with a researched time. Low-acid foods need a pressure canner at 240–250 °F 1. Details: Canning and Acidity.
Cooking Jam until it gels is not the same as canning it. The strawberry formula in Strawberry jam (powdered pectin) follows NCHFP, including altitude-adjusted boiling-water times 2. If you change fruit, sugar, or acid, you are no longer on that process.
Dairy #
U.S. cheddar identity requires that if dairy ingredients are not pasteurized, the cheese is cured at not less than 35 °F for at least 60 days 3. That is a rule for a standardized commercial cheese, not a home-cheesemaking procedure. Fresh cheeses and raw milk have different, stricter practical risks; an aging chart cannot make those risks disappear.
Fermentation #
Sourdough and wine are not canning. They still fail — off smells, unwanted films, exploding bottles. When a ferment is used as a preservation method, use a tested process: Pickling, Sauerkraut, Fermented pickles, Kimchi. Do not treat bread starter as a model for low-acid canned food.
Selling food from a home kitchen is a different rulebook: Cottage food (California list + local permit). It does not replace a tested canning process.
If two authorities disagree, follow the tested process for your jurisdiction and altitude. Do not average them. Preserving is the craft hub.

Keep bread starter out of the canning argument
The fermentation section already says sourdough is not canning. Good. I would keep that wall high. I keep a starter and I also water-bath jam. Those skills share vinegar-and-acid vocabulary in casual kitchens, which is how people get hurt. This page should keep pointing at NCHFP for jars and at tested vegetable ferments for kraut and pickles — not at a flour culture as a model for low-acid food in a sealed jar.
