Mise en place

Having ingredients measured, tools ready, and the next addition sitting where you will not forget it — so a mix, a kettle, or a vat does not wait on a missing bag of salt.

Mise en place is putting the work in place before the irreversible step. It is not a French personality. It is bowls, scales, and a salt pile you can see.

Baking makes the failure obvious

King Arthur on autolyse: if you delay salt, yeast, or starter, measure them out and place them next to the bowl so you do not forget; sprinkle salt on the autolyse if you are afraid you will 1. Unsalted bread is a mise failure, not a fermentation style. Their other practical: moisten all the flour in the rest, because dry pockets will not catch up later.

Weighing is how those bowls get honest. Baker’s percent is how you know the dough you intended 2. Unit conversion is how you scale it before you start, not while the mixer is running. Mixing then has a chance.

Heat and safety

A canner, a fryer, and a cheese vat do not pause politely. Read the tested process or the make sheet first. Food safety is the authority for jars and leftovers; mise is having the jars, lids, and timer actually there.

Cutting fruit or curd before the kettle or vat needs it is the same idea with a knife.

What to observe

Look at the bench: every ingredient visible, every tool that will be hot already dry and close. Smell whether the starter is the one you meant. Failure is a mix with no salt, a jam without lemon juice, a culture packet still in the freezer. Taste at the end is Tasting, but you cannot taste a step you skipped.
