Temperature measurement

Reading the temperature of dough, food, or a bath with a probe — and knowing which clock you are on: bakery DDT versus the USDA danger zone for perishable food.

Temperature measurement is a probe in the mass, not a guess from the wall thermostat. Two jobs share the instrument and must not share the rule.

Bakery process

Desired dough temperature is the dough when mixing ends. King Arthur’s practical range for wheat yeast dough, including their wheat sourdoughs, is near 75–78 °F after mixing 1. That is workshop consensus, not cereal science and not a pathogen limit. Water temperature is the lever you still have; flour and room are measured inputs. Friction is measured on your mixer 2.

Probe the dough, not the bowl wall. King Arthur’s too-hot trial (dough around 94 °F) raced, then collapsed, with a bitter acidic crumb 1. Details: Desired dough temperature. Fermentation then runs from that starting condition.

Perishable food safety

USDA FSIS: bacteria such as Salmonella and E. coli grow most rapidly between 40 °F and 140 °F, doubling in as little as 20 minutes; never leave food out of refrigeration more than 2 hours (1 hour if the air is above 90 °F). Keep hot food at or above 140 °F, cold food at or below 40 °F; leftovers into shallow containers and the refrigerator within that two-hour window; reheat leftovers to 165 °F 3.

That clock is for meat, poultry, cooked leftovers, and picnic food. It is not dough DDT. A bulk ferment at 76 °F is not a roast turkey in the danger zone. Food safety is the hub; Heat transfer is how heat arrives.

Calibrate cheap thermometers in ice water and in a proper boil at your altitude. A lying probe makes both jobs wrong. Weighing is the sibling habit.
