How heat actually reaches food — water, steam, metal, air, or the mixer itself — so a crumb sets, a crust dries, or a vegetable blanches.

Heat transfer is the path, not the thermostat number. Boiling water, trapped steam, a Dutch oven wall, dry oven air, and a mixer paddle are different paths. Food fails when the path does not match the job.
Steam and metal in bread #
King Arthur: professional ovens inject steam, then vent so crusts brown and firm; a Dutch oven is a small chamber that traps the loaf’s own steam and throws even radiant heat 1. Early moisture keeps the crust extensible; later dryness lets it crisp. Convection, in their home-oven note, is designed to make the oven heat drier — useful after spring, hostile during it.
That is Baking the loaf. Surface starch swelling is Gelatinization. Moisture leaving is Evaporation.
Work becomes heat #
Mixing turns mechanical energy into dough temperature. King Arthur’s friction factor is an empirical rise in °F or °C for this mixer, batch, and time — not a physics coefficient you copy from a blog 2. The process target is Desired dough temperature. Measure the dough in the mass.
Water as the messenger #
NCHFP blanching is a short heat in boiling water or steam to slow enzymes and wilt vegetables 3. Water carries heat fast. Ice water afterward stops the cooking. Times stay on NCHFP. Canning is a longer, researched heat in a sealed jar — a different path and a safety process.
Not dough DDT #
USDA FSIS: bacteria in perishable food grow most rapidly between 40 °F and 140 °F; do not leave such food out more than two hours (one hour if above 90 °F) 4. That clock is for meat, leftovers, and picnic salad. It is not a desired dough temperature and not a bulk-fermentation rule. Measuring both jobs is Temperature measurement.
