Water activity

How much water in a food is actually available for microbes and enzymes to use — lowered by drying or by binding water with sugar or salt, not the same number as “percent moisture.”

Water activity is the practical idea that microbes need available water, not merely water that shows up on a moisture test. A wet jam and a wet cucumber are not the same habitat. A decimal threshold is meaningful only when it is tied to the food, organism, temperature, and validated process being discussed.

Remove water

NCHFP treats drying as a preservation method that removes water, complementary to canning and freezing 1. In Drying, pieces shrink and lighten; when you add water back they plump. Mold on a “dried” apricot that still feels leathery is water that was not actually gone — a quality and spoilage failure, not a reason to guess a meter reading.

Bind water

Ohio State: sugar in jam must be in proportion with pectin and acid to gel, and it also limits microorganisms 2. That is why you cannot swap a non-sugar sweetener into a regular-pectin canned jam and keep the same process. Sugar is structure and, in traditional high-sugar gels, part of preservation. Osmosis is the cousin mechanism when salt or sugar draws liquid from a plant cell.

Do not confuse the safety jobs

Canning is a heat process in a sealed jar. NCHFP/USDA: moist, low-acid, low-oxygen food is the botulinum problem; acidity and a tested process are the answers, not a home water-activity gadget 3. A gelled jam that never saw a tested Canning process is still a refrigerator food.

Dried food is not canned food. Canned food is not jam in a pot. Food safety is the hub. Evaporation is how a kettle or a dehydrator actually removes water.

Observe: sticky-dry versus brittle-dry, syrup versus gel, and whether the jar or the bag was a tested method. Do not average those cues into a fake safety number.
