Wheat flour

Wheat flour is what a miller chose to keep from a wheat kernel and grind to a baking powder. In the usual white flour, that choice is mostly endosperm. Whole wheat flour keeps the kernel’s parts in the food. Neither bag is “wheat” the plant — that is Wheat — and neither bag is Gluten yet. Gluten is a network the baker develops with water and work.
In U.S. food law, cereal flours are standardized foods. Wheat flours and related products are grouped in 21 CFR Part 137 1. The legal names on a bag (flour, bread flour, whole wheat flour) are identity standards, not mill-brand poetry.
Why bakers care #
Flour is the structure, the food for fermentation, and most of the flavor of a lean loaf. Protein content is a useful clue and a poor religion. Calvel’s account of breadmaking flour is about behavior in dough — gluten, ash, enzymes — not a single number to worship 2.
Ash, measured as inorganic residue after combustion, is an indirect indicator of residual bran because those minerals are more concentrated in bran than in endosperm 3. A baker who only reads protein is missing the mill’s cleanliness story. How the kernel was opened, sieved, and blended is Milling.
What to notice in dough #
Protein on the spec sheet predicts tendency, not a loaf.
Absorption — how much Water a flour will hold while remaining shapable — moves with protein, damaged starch, and bran. The same “75% hydration” country formula is a different dough in August with a new lot. Adjust water to the flour in front of you; do not treat a percentage as a moral rule.
Salt tightens gluten and slows fermentation. It is not a flour substitute.
