Cherry

A stone fruit whose sour sorts Ohio State places as low in acid or pectin, and which U.S. jam identity lists in Group I with pit weight excluded.

Cherry is a stone fruit: flesh around a pit. Ohio State places sour cherries in Group II: low in natural acid or pectin; might need addition of either 1. Sweet eating cherries are not on that row; do not assume they gel like sour pie cherries.

Jam identity. 21 CFR 150.160 lists cherry in Group I, and for cherries the fruit weight excludes pits and seeds 2. Peach is another stone fruit with pits excluded in that standard. Kitchen gel is still Pectin and Jam.

What to notice. Sour cherries taste like acid you may still need to bottle. A meaty sweet cherry tastes like dessert and may act like a low-pectin fruit. Canning pie filling or jam requires a tested process matched to the fruit.
