Pectin

A plant polysaccharide that can gel fruit, sugar, and acid into jam and jelly when concentration and pH allow the chains to network.

Pectin is a structural carbohydrate in plant cell walls. In a preserving kettle it can form a gel — a network that holds water and fruit in a spreadable solid. It is not gelatin. It is not starch. Ohio State Extension: pectin is the natural substance in fruit that causes juice to gel; some fruits have enough, others need added pectin; just-ripe fruit has more useful pectin than fruit that is under- or overripe 1.
The four-way contract #
A conventional high-methoxyl gel needs pectin, Sugar, Acidity, and enough concentration (water boiled off). Sugar competes for water so pectin chains can associate. Acid brings the pH into the window where that association holds. Heat helps extraction and concentration; it can also damage pectin if you boil the fruit to death on the way to juice 1.
Why sugar helps jam set: not because “sweetener thickens,” but because a high soluble-solids mix is the environment high-methoxyl pectin was characterized in. U.S. standardized jam even specifies a finished soluble-solids floor of 65% 2. Kitchen jam can be softer than that legal name. Low-methoxyl (“no sugar needed”) pectins gel with calcium and are a different product; follow that packet, not a regular-pectin formula 1.
Why strawberries are difficult #
OSU places strawberries in the group that always needs added acid, pectin, or both 1. Ripe strawberries taste best and gel worst. The NCHFP tested jam therefore stirs powdered pectin into crushed fruit before sugar 3. That order is process control.
Apples, citrus pith, and some plums sit at the other end: enough native pectin to gel with sugar alone if you concentrate far enough. Marmalade uses peel for that reason.
What to observe #
A gel that sheets from a spoon, wrinkles on a cold plate, or holds a mound is pectin working. Syrup that stays syrup is a missing corner of the contract — pectin, acid, sugar, or boil. Weeping jelly is often too much acid 1.
Commercial powdered and liquid pectins are not interchangeable in a recipe. Do not carry pectin from one year to the next past its date 1.
