Strawberry

A soft berry whose ripe flavor is excellent in jam and whose pectin is often too low to gel without help.

Strawberry is a fruit you smell before you trust the color. For preserving, two facts pull in opposite directions: fully ripe berries taste like strawberries; fully ripe berries are grouped with fruits that need added acid, pectin, or both if you want a conventional gel 1. That is why the tested NCHFP jam uses crushed ripe fruit and a package of powdered pectin 2.
What to notice #
Look. Bright color, no wet collapse. White shoulders can mean underripe or a variety quirk.
Smell. The volatile is the quality test. Pale perfume means pale jam.
Feel. Soft enough to crush; not slime.
Taste. Sugar and acid in the berry become the jam’s baseline. A dull berry will not be rescued by boiling.
OSU’s old kitchen split — some people can fruit ¼ underripe for pectin — is a pectin strategy, not a flavor strategy 1. Commercial pectin lets you use ripe fruit and still set. Low-sugar pectins are a different contract; see Pectin.
California seasons put strawberries on Bay Area tables early and often; the harvest varies by farm and year. A market such as the Ferry Building is where city eaters meet fruit. Cook them as Jam; can them only on a tested process (Strawberry jam (powdered pectin)).
