San Francisco

San Francisco is where Tartine Bakery bakes on Guerrero Street, where Ferry Building gathers merchants at the foot of Market Street ¹, and where the outdoor Ferry Plaza Farmers Market is a Foodwise certified market on the same waterfront — not the indoor shops. Sourdough became a civic story — argued on San Francisco sourdough, embodied commercially at Boudin Bakery, and baked cooperatively in the Inner Sunset at Arizmendi Bakery (9th Avenue). The Mill on Divisadero is a closed cafe-bakery.

The city eats what it does not grow. Marin County dairies and Napa Valley vineyards are the hinterland. Flour often arrives from plants just over the county line — Giusto's Vita-Grain in South San Francisco is one mill-and-processor node.
