Giusto's Vita-Grain

Giusto’s is not a bakery and not a farm. It is the kind of Peninsula plant cities forget when they talk about “local bread”: a mill and blending house between the grain and the mixer.

The company’s public site places the business in South San Francisco at 344 Littlefield Avenue and dates the name to 1940. It calls itself a processor and wholesaler of organically grown grains in the western United States, and it states that its whole wheats are milled from the entire berry and that its unbleached flours are not treated with bleaching agents or bromates ¹. Those are producer claims about their products. They are not a USDA mill-flow diagram, and they are not a tasting of anyone’s loaf.

Giusto’s connects Milling to the Bay Area food system. Flour in a San Francisco or Berkeley bakery passes through a mill and processor before it reaches the mixer. The plant is in South San Francisco, on the peninsula, not inside the city county of San Francisco. Wheat is the crop; Wheat flour is the food; Sourdough is one craft that lives with whatever this kind of mill ships.
