Boudin Bakery

A San Francisco bakery dating its sour French bread to 1849, still operating in the city, and the usual public face of “San Francisco sourdough.”

Boudin is how many visitors first meet San Francisco bread: a sour round, a long company timeline, and a mother dough the house says it has kept. The bakery’s history page dates establishment to 1849, a North Beach address at 319 Dupont (Grant Avenue) in 1852, and an 1868 refusal to switch the bread to Fleischmann’s cake yeast 1. The same page states it is “believed” that Isidore Boudin received mother dough from a Forty-Niner 1. Belief is not a chain of custody.

The city’s Legacy Business staff report repeats the 1849 founding, notes that the first storefront was 1852, and records Louise saving the mother dough in 1906; it places later ownership with Stefano Giraudo from 1941 and calls the 10th Avenue and Geary site the oldest remaining San Francisco location 2. The company now operates many California rooms, including tourist-facing bakeries.

Use Boudin to teach continuity of commercial sour bread in this city. Do not use it as proof that Fructilactobacillus sanfranciscensis lives only at Fisherman’s Wharf.
