Honey

A floral syrup that can replace part of the sugar in some tested fruit spreads — not a free swap for the sugar a regular-pectin jam requires.

Honey is nectar concentrated by bees. It is a sweetener with a flavor of its own, not a synonym for Sugar.

Ohio State: you can replace part but not all of the sugar in fruit spreads with light, mild honey; for best results use tested recipes that specify honey; never change the amount of sugar in a recipe 1. Brown sugar, sorghum, and molasses are discouraged in the same fact sheet because their flavors overpower fruit. Honey is allowed only inside that partial-replacement rule, and only where a tested formula says so.

Jam. Regular pectin gels need sugar in proportion with pectin and acid 1. Honey does not inherit sugar’s job because it tastes sweet. If you want a pantry jar, stay on the tested process. See Jam, Pectin, and Food safety.

Baking. A little honey in dough is flavor, color, and food for fermentation. It is not jam’s fruit-to-sugar contract. Application: Baking.

Mead. Honey as the sole fermentable (with water, and optionally hops under a cap) is Mead — honey wine, not grape wine. See Drinks.

Taste honey as aroma (floral, dark, bitter) separate from sweetness. Then notice whether a spread still sheets, or whether you merely made fruit syrup that tastes like flowers.
