Aging wine

Aging wine is not affinage. Cheese aging is a moist dairy paste with living rinds; see Affinage. Wine aging is a mostly finished ferment in a vessel, changing by chemistry and a little oxygen.
Smith and colleagues note that after fermentation, tannins continue to change: color can shift from purple toward brick, and tannin structure keeps rearranging through reactions with fermentation products and acids 1. You taste that as a different grip, not as a calendar reward.
Vessel and oxygen #
- Stainless steel, full. Very little oxygen. Fruit stays primary longer. Common for wines meant to be fresh.
- Oak barrel. Slow oxygen through wood and bung, plus oak flavor compounds if the barrel is new enough to contribute them. Size, toast, species, and how many times the barrel has been used all matter. Details: Barrel.
- Bottle under cork. Tiny oxygen ingress over years; too much and the wine oxidizes. Screw cap is a different oxygen story, not a quality insult.
“Let it breathe” in a glass is minutes of volatile change, not barrel aging. Watch the wine; do not obey a thirty-minute rule.
What to observe #
Color at the rim. Aroma moving from primary fruit toward dried fruit, leather, or nut — or toward vinegar and sherry if oxygen won. Tannin that felt sandy becoming more continuous. Faults (cork taint, volatile acidity that shouts) are not “complexity.”
The useful distinction is not simply young versus old, but which reactions are winning: tannins can keep rearranging with anthocyanins and other fermentation products, changing both color and the shape of the grip 1. Read a softer finish alongside the wine’s color and aroma; age has changed the wine, but it has not guaranteed improvement.
Variables #
Starting phenolic load, pH, sulfur dioxide practice, temperature of storage, and how much wine is in the bottle (ullage). A wine without the structure to age will not acquire it in a closet.
