Tasting wine

Taste physics before poetry. Tannin is astringency — saliva proteins, not a flavor adjective 1. Geography after the path: Napa Valley, Sonoma County, then Appellation of origin as the label rule and Terroir as interpretation rather than an AVA. Cellar neighbors: Must, Residual sugar, Sulfur dioxide, planted place as Vineyard. Cheese is a useful next door, not a pairing commandment: Tasting cheese.
