Brix

Dissolved solids in juice or wine expressed as grams of sucrose per 100 grams of solution at 68 °F — a density number, not a tasting of sweetness and not a harvest commandment.

Brix, in U.S. wine production language, is the quantity of dissolved solids expressed as grams of sucrose in 100 grams of solution at 68 °F (20 °C) — percent by weight of sugar in that definition’s parentheses 1. It is a solids scale calibrated as sucrose. Other dissolved matter in Must (acid, pectin, minerals) rides along. It is not a sip of sweetness. Residual sugar is what yeast left (or what you stopped them from eating) after Wine fermentation.

Total solids in the same glossary are the degrees Brix of unfermented juice or of dealcoholized wine 1. Once alcohol is present, the liquid is no longer a simple sucrose solution, so a hydrometer reading needs an appropriate alcohol correction.

Chaptalization may not raise the original density of the juice above 25 degrees Brix 2. Domestic Mead (honey wine) may be diluted with water only down to 13 degrees Brix, and finished honey wine is capped at 35 degrees Brix total solids in that production section 3. Grape-wine identity uses Brix again for a volatile-acidity exception on very high-solids unameliorated juice (28 or more degrees Brix) — a labeling chemistry line, not a pick date 4.

A pick date cannot be set by “24 °Brix” alone. Ripeness of Grape is sugar plus acid plus flavor; Brix is one meter. Cider juice has a Brix too; it is still fruit wine, not grape wine.

What to notice

In the vineyard or at the crush pad, rising Brix tracks ripening sugar. In the fermenter, falling Brix (or specific gravity) tracks yeast eating solids. A dry wine can read at or below zero on a Brix hydrometer because alcohol is lighter than water — that is density, not “negative sugar.” Taste sweetness against acid; do not argue with the glass using an unsourced conversion to alcohol.

Failure: treating Brix as only fermentable sugar, then wondering why a high reading did not yield the alcohol you guessed. Failure: chaptalizing past 25 °Brix original density.
