A soybean is the seed of Glycine max. USDA’s grain standard defines soybeans as grain that consists of 50 percent or more of whole or broken soybeans (Glycine max (L.) Merr.) that will not pass an 8/64-inch round-hole sieve, with not more than 10.0 percent other grains 1. That is identity at the elevator. It is not a kitchen soak time.
The seed is crushed for oil and meal because it is both Fat and Protein. U.S. grade factors in that definition section are physical (sieve, other grain), not oil or protein percentages. Oil and protein content vary by variety and lot.
Soy flour is a processed food, not raw beans #
FDA’s wheat-and-soy macaroni identity needs soy flour made from heat-processed, dehulled soybeans, with or without the fat removed, at not less than 12.5 percent of the combined wheat and soy ingredients 2. Two facts sit in that sentence: soy flour is heat-processed and dehulled, and fat may already have been taken out. Full-fat and defatted flours are not the same dough. Maine Extension lists soybean among bean/legume flours used in gluten-free blends — protein and fiber, best combined with other flours 3. That is baking use, not pasta law.
Soy flour is not Wheat flour. It does not develop wheat gluten. Heat history matters: under-processed soy can taste beany and bitter; the macaroni standard’s “heat-processed” is there for a reason.
Not a dry bean, not a recipe #
USDA’s edible-bean classes are another commodity. This seed is an oilseed grain in 7 CFR 810, not a navy or pinto class. See Dry bean for those. Miso, tempeh, and koji start from this bean (or its flour) plus Fermentation, but each craft transforms it differently. Soaking and boiling are preparation steps; koji growth is a separate controlled culture.
What to notice #
Dry soybeans are small, oval, usually yellow, with a visible hilum. They do not cook like a soaked pinto. Smell toasted soy flour for nuttiness versus raw beany green. Oil from the same seed is a liquid fat; meal is the protein left after crush. If a bag says soy flour, ask whether fat is still in it — the pasta identity allows both.
