Napa cabbage

An elongated heading brassica — also called Chinese or winter cabbage — whose leaves are the usual vegetable for baechu kimchi, not for USDA sauerkraut.

Napa cabbage is a headed leaf vegetable with a long, relatively tender head. UGA Extension names it as the typical kimchi cabbage, also called Chinese or winter cabbage 1. Cabbage is the firm round head NCHFP uses for Sauerkraut 2. They are different ingredients with different fermentation uses.
For Kimchi, salt draws juice from these leaves; chili and aromatics ride along. For kraut, salt and headed cabbage are the whole habitat. Lacto-fermentation is the shared microbial job.
What to notice. Compact, elongated heads that feel heavy. Outer leaves that are slimy or rotten are not a ferment. Salt is required in these vegetable ferments; cutting it is not a diet tweak on a safety page.
