Lacto-fermentation

Preservation and souring by lactic acid bacteria that convert vegetable sugars into lactic acid, as in sauerkraut and fermented pickles — not the same process as a vinegar quick-pickle.

Lacto-fermentation is Lactic acid bacteria at work on a vegetable, not a splash of bottled vinegar. During curing, NCHFP says colors and flavors change and acidity increases 1. The acid you taste is largely lactic (sometimes with acetic notes from heterofermenters). Fresh-pack pickles skip that wait: they are acidified with vinegar and are not fermented 1.

The shared biology is Fermentation. Bread’s LAB live in flour paste; cheese cultures live in milk; vegetable fermentation depends on salt, cabbage or cucumber, and time. Kimchi is the seasoned napa cousin; kraut timing does not transfer directly to that jar. The 2020 Lactobacillus split renamed many species into new genera; the metabolic job — lactic acid from sugars — is what the kitchen still hires 2.

Salt and temperature are the levers you actually have

Salt in fermented sauerkraut and brined pickles is vital to safety and texture, not optional flavor. Do not cut it 1. Cover the food; details on the liquid are Brine.

Temperature moves the clock and the quality. For sauerkraut, USDA/NCHFP: store at 70° to 75°F while fermenting. At that range, kraut is fully fermented in about 3 to 4 weeks; at 60° to 65°F, 5 to 6 weeks. Below 60°F, kraut may not ferment. Above 75°F, it may become soft 3. Those numbers are for kraut, not a universal pickle calendar. Regular dill pickles and sauerkraut are described as fermented and cured about three weeks; refrigerator dills about one week 1. Watch the food, not only the wall clock.

What to notice

Bubbling that later ceases is NCHFP’s cue that a weighted-bag kraut ferment has finished 3. Smell should be cleanly sour, like yogurt more than nail-polish remover. Scum on a jar-weighted crock is something to remove on their schedule, not to stir in. Soft, slimy, or rotting food is a failure; do not invent a rescue for a safety failure.

Sourdough is lactic fermentation in dough — a cousin habitat, not a pickle process. Cheese cultures acidify milk for Coagulation. Wine’s malolactic step is bacteria on malic acid after yeast; see Malolactic fermentation. Vegetable fermentation includes Sauerkraut.
