Gelatin

An animal protein that gels water on cooling — a thickener some no-sugar fruit spreads use, and not pectin.

Gelatin is a protein gel. You dissolve it in hot liquid; it sets as it cools. It is not Pectin. It is not Starch. A gelatin dessert and a pectin jam can both quiver; they are different networks.

Ohio State, on fruit spreads without added sugar or with reduced sugar, lists recipes that use unflavored gelatin as the thickener for jam or jelly, often with artificial sweetener 1. That is a different contract from high-sugar pectin gel. Do not swap gelatin into a regular-pectin formula, and do not swap pectin into a gelatin formula. Follow the process that named the thickener.

Jam. Traditional Jam is pectin, Sugar, acid, and concentration. Gelatin spreads are a separate family. Storage rules follow the recipe you used — some need refrigeration. See Preserving.

What to notice. Bloomed gelatin swells and turns translucent; melted, it is a warm solution; set, it cuts. Weeping or a rubbery slab is a hydration or concentration miss, not a pectin sheet test. Do not use the jelly thermometer as if this were sugar gel.

Aspic is one use for gelatin; vegetarian gelling agents are different materials with different setting behavior.
