Salting cheese

Adding salt to cheese by dry salt or brine so that flavor, moisture, and microbial activity are set together.

Salt in cheese is not a finishing sprinkle. FAO lists salting as its own stage: dry salt on the surface or in the mass, or immersion in brine 1. Cheddar identity has the curd “salted, stirred, further drained, and pressed” 2.
Salt does three jobs at once:
- Flavor. Undersalted cheese tastes unfinished; oversalted cheese tastes only of salt.
- Moisture. Salt draws whey. Dry-salting a milled curd continues drainage; brining a formed wheel creates a salt gradient from rind inward.
- Microbes. Salt slows some bacteria and favors others. It is a control, not a sterilizer. Pathogen rules for dairy are not a salt-percentage slogan; do not treat a salty cheese as automatically safe.
CDR lists salt beside moisture, fat, and pH as a compositional test on every vat if you intend to age the cheese 3. Their cautionary cheddar — too moist and about 1.1% salt taken to a long “sharp” calendar — is a composition failure, not an affinage failure.
What to observe #
Feel. Dry-salted curd weeps and tightens. A brine bath makes the rind tacky, then firmer.
Taste. Wait. Surface salt is not the same as salt in the paste. Young brined cheese can taste salty at the heel and mild at the core until equilibrium.
Look. Uneven salt shows up later as mottled ripening or a rind that dries on one face.
Variables #
Grain size, mixing, brine strength, time, temperature, and wheel size. A small fresh cheese salts through quickly; a large hard wheel is a diffusion problem measured in days.
This is the same substance bakers use to tighten gluten and slow yeast, and the same substance that, in other concentrations, preserves. Salt covers its broader culinary role.
