Whole-wheat bread

Bread whose structure must survive bran and germ in the flour — thirstier dough, less gluten per gram, and a denser crumb than white-flour bread unless the baker changes water and time.

Whole-wheat bread is a craft problem: the loaf is built from flour that still contains bran and germ, so Gluten is both diluted and physically disrupted. King Arthur Baking: gluten-forming proteins sit in the endosperm; anything else in the bag is less gluten overall, and ground bran is hard and sharp 1. Wheat is the plant; Wheat flour is the mill stream.
U.S. whole wheat flour (also graham, entire wheat flour) is a legal identity: cleaned wheat other than durum, natural constituents unaltered except moisture, granulation sieves in the rule 2. U.S. whole wheat bread as a standardized food must be made from that whole wheat flour (or bromated whole wheat flour) with no white flour, bromated flour, or phosphated flour in the dough 3. A loaf that is 40% whole wheat and 60% white may be honest bread; it may not use that legal name. Calvel’s flour-in-dough discipline still applies 4.
Why it matters #
Swap whole wheat into a white formula without changing water and you get a stiff dough that will not rise as high. King Arthur: whole wheat absorbs more liquid; 100% substitution in a yeast recipe significantly lowers rise unless you add liquid and rest before kneading (they use about 2 teaspoons extra liquid per cup of whole wheat, then 30 minutes) 5. Flavor is more assertive in a plain sandwich loaf than in chocolate cake.
A speckled crumb is bran, not under-mixing.
Mechanism #
Milling decides whether the bag is whole-kernel or white. In dough:
- Dilution. Less endosperm per gram → less gluten potential.
- Bran. King Arthur’s artisan-bread teaching: sharp bran interferes with the network; extra water softens bran and helps gluten link; folds during bulk build what network exists; extended Autolyse (hours, even overnight, in their whole-grain account) gives hydrophobic bran time to wet 1. They treat about 25% whole-grain substitution in a white formula as often tolerable without drastic structure loss; above that, change water and technique. That 25% is workshop guidance, not a law.
- Germ. Fat and flavor; whole-grain flour also goes rancid faster than white — storage, not mix time.
Hydration will read higher than the white formula for a similar feel. High-extraction doughs look dull. They ferment as if they had more to eat, because they do.
A pan can support a wetter whole-wheat sandwich dough the way it supports other slack doughs (Pan bread).
