Oven spring

The rapid rise of a loaf in the first minutes of the bake, when trapped gas expands before the crust sets.

Oven spring is the volume a loaf takes as it hits a hot oven. King Arthur Baking uses that definition in their steam teaching: early Steam keeps the surface moist so a Crust does not form before the spring is finished 1. Calvel's oven sequence is the same idea in shop language — the first minutes decide height 2.

The gas is already in the dough from Fermentation. Heat expands it; remaining yeast has a brief burst; water becomes vapor. Gluten has to stretch instead of tearing. Scoring is the planned weak line. None of that is a new leaven. A loaf that entered underproofed or overproofed will not discover oven spring in the chamber.

What to notice

Look through the door in the first minutes: the loaf should lift and the cut should open. Then the crust colors and the expansion stops. King Arthur: once spring is in and color has started, vent so the crust can dry — about twenty minutes into a covered or pan-steam bake 1. Leave steam the whole time and you keep a soft jacket that never finishes.

No spring: dense Crumb, unopened score, often a Final proof that went too far or never got there, or a dry oven that locked the skin. Wild burst away from the score: underproofed, or a skin that set while gas still had somewhere to go. Heat will not correct a dough that was never ready.
