Dutch oven

A lidded pot used at home as a small steam chamber: it traps the loaf's own vapor for the first part of the bake, then is uncovered so the crust can dry.

A Dutch oven, in bread, is a covered pot that stands in for a steam-injected deck. King Arthur Baking: Dutch ovens trap the steam the loaf itself throws, with even radiant heat, like a self-contained bread oven 1. That is Steam as a vessel, not a second science of water.

A Dutch oven is a covered baking vessel, not a professional oven. The lid stays on while Oven spring needs an extensible Crust, then comes off so the crust can dry and color. King Arthur: uncover after about twenty minutes, once spring and the first color are underway 1.

Geometry is the limit

A classic deep pot means lowering the loaf in (parchment as a sling). A Double Dutch lets you land the loaf in the shallow skillet-lid and dome the body over it 1. Either way the pot dictates a round loaf near its size. Oval bâtards, baguettes, and anything taller than the lid need a different steam method on a stone — that loading problem lives on Oven loading. Hearth bread is the style that cares; pan loaves can take steam but need it less.

Failure

Lid on the whole bake: a pale, soft crust that never dried. No preheat: a pot that cannot trap a sudden burst of vapor. A loaf jammed against the lid: a baked crease, not oven spring. Spray-bottle theater with the lid off is not this method.

The teaching loaf that can live in a covered pot is Country loaf (teaching formula). The shared steam rules — start wet, finish dry — stay on Steam.
