Headspace

The unfilled space left at the top of a canning jar so food can expand and a vacuum can form — a measured gap from a tested process, not a guess.

Headspace is the empty bit under the lid. Food expands as it heats; air needs a path out so the lid can seal. Too little space and food is sucked into the seal or boils over. Too much and the jar may not vacuum. That is a mechanical fact of Canning, not a style choice.

The correct gap is part of the tested process for that food and jar. Headspace charts are food- and jar-specific.

Two sourced examples, not a universal number

NCHFP’s powdered-pectin strawberry jam is filled leaving 1/4 inch headspace 1. Their sauerkraut canning directions, hot pack or raw pack, leave 1/2-inch headspace 2. Those are different foods, different fills. Copying jam’s quarter-inch onto kraut, or kraut’s half-inch onto jam, leaves the process you thought you were following.

A gel that set in the kettle does not forgive a sloppy fill. Neither does an acid ferment. See Jam and Sauerkraut.

What to notice

After processing, look for a concave lid that does not flex. Food should sit below the rim with a visible gap; bits on the sealing surface are how seals fail — wipe rims as the jam directions say 1. A jar that sealed but was filled to the brim, or left half empty, is a quality and process problem. Do not invent a rescue for a questionable seal on low-acid food.
