Garlic

A pungent bulb used as a pickle spice and as a low-acid vegetable — flavor in a brine, not a canning shortcut.

Garlic is a bulb you smell before you taste. In cooking it is an aromatic, not a low-acid vegetable made shelf-stable by a boiling-water shortcut.

NCHFP treats pickled products as spices, sugar, and vinegar blended with fruits and vegetables 1. Garlic is one of the spices a pickle jar often carries next to Cucumber. It is flavor. It does not acidify the jar. Vinegar (or a tested fermentation) does that.

Canning. Fresh vegetables except most tomatoes are low-acid foods (pH above 4.6) 2. Garlic belongs with that vegetable class, not with jam fruit. See Canning and Preserving.

What to notice. Firm cloves, tight skins, a hot smell when cut. Sprouted green cores are age; they taste grassy. Burned garlic is bitter, not “deeper.”

Onion is the milder allium neighbor. Confit is a separate cooking method.
