Enriched dough is bread (or viennoiserie) with a real load of fat, sugar, eggs, or dairy — not a spoon of oil in a country loaf. Those extras coat flour, compete for water, and slow Gluten. Lean dough is flour, water, salt, and leaven. Calvel's technical bread is the lean craft; enrichment is a different mixing problem 1.
King Arthur Baking's autolyse work is the sourced contrast. A true flour-and-water rest is for lean doughs. Eggs, sugar, and whole milk interfere with gluten development during that pause, and if you leave them out so the rest can happen, the flour may not be wet enough. Their practical call: knead an enriched formula as a whole rather than forcing autolyse 2.
What to notice #
The dough is often softer, stickier, and slower to show a windowpane. Fat delays gluten; sugar feeds yeast but also tenderizes. Mixing takes longer or a different pattern than a baguette. Dough development is still the goal — a network that can hold gas — but the feel is not a lean bâtard.
Lamination is enrichment taken further: fat in sheets, not fully mixed in. Do not treat croissant dough as a wetter poolish.
Failure: running a lean autolyse on a milk-and-egg dough and wondering why it will not come together; or mixing enrichment until the carotenoids and the gluten are both exhausted. The allowed sources here do not give butter percentages. Omit invented ones.
